Stuffed Acorn Squash!

Squashes are wonderful. So simple, so delicious. Give them a try, won’t you, friend?

Stuffed Acorn Squash recipe: 

Ingredients

  • 1 Acorn Squash
  • some butter
  • Your choice brand Italian sausage
  • Mushrooms
  • Red/Yellow Onions (depending on what is available)
  • Garlic, minced

Directions

  1. Preheat oven to 400
  2. Cut squash in half and empty out seeds.
  3. Put a teaspoon of butter in each half and bake for 45 minutes, open side facing up.
  4. Meanwhile, chop onions, slice mushrooms and sausages, mince garlic
  5. Heat up a pan, add minced garlic and oil, then saute the rest of the ingredients together
  6. When squash is done, put sauted mixture into the empty halves and enjoy!

Turkey Dinner

This post has been sitting as a draft for such a long time I almost forgot about it…but alas here we go!

Our friend, Paul, spent a year in Turkey last year on missions and just got back this past fall. Sooo he wanted to check out this Turkish place on Miramar called Kebab Shop and took us along. Here are the dishes from that night.

Pretty heavy, as most of it was meat and carbs (two of the best things in the world) but it was all very yum 🙂
